There is always a moment when someone in the family group chat asks the obvious question: so what are we feeding everyone? A naming celebration, a Friday lunch at the office, an association meeting, a house full of people who have come to pay their respects. You are thirty, forty, sometimes more, and nobody fancies spending two days at the stove. In those moments, choosing to order couscous for a group in Agadir is still the simplest and the truest answer: one dish, everyone happy, nothing to explain to anyone.
At Madina in Haut Founty, couscous has always been part of the house. It is our Friday dish. These days we also prepare it in quantity and bring it to you: at home, at the office, or in whatever room you have booked. Delivered hot, ready to serve, with the kit that keeps it that way. Here is how it works, plainly.
Why couscous is the dish that scales
Couscous was never designed as an individual portion. It is piled into a dome, set down in the middle of the table and served with a ladle. The more people gathered round it, the more sense it makes. You do not shrink a couscous, you pull up another chair.
There is a practical reason too: couscous travels well. The semolina holds its heat, the broth is carried separately and poured at the last moment, the vegetables keep their shape on the road. Plenty of dishes lose their soul between the kitchen and the table. This one arrives intact.
And it settles the argument before it starts. Children, grandparents, the guest who eats like a bird and the one who goes back three times. You do not need a menu with options and sub-options for forty people. You have one dish, and it does the work.
What is actually in the dish
Nothing complicated, but nothing you can rush either. A good couscous is patience spread across three elements.
The semolina
It is rolled, steamed, aired, then steamed again. That repetition is what gives you light, separate grains rather than a heavy mass. It is the foundation: if the semolina is wrong, nothing else saves the plate.
The vegetables
Tradition talks about seven vegetables, though every household keeps its own list. Courgette, carrot, turnip, pumpkin, cabbage, onion, chickpeas: cooked slowly, holding their shape, crowning the dome.
The broth and the meat
The broth is the heart of the whole thing, the part that perfumes the semolina as it is poured at the table. As for the meat, lamb or chicken, that comes down to preference and occasion. Tell us what you have in mind and we will talk it through when we put your quote together. There is no fixed formula waiting for you.
If the dish interests you, we go into it further in our piece on Friday couscous, and the rest of our classics live over in Moroccan dishes in Agadir.
Friday first, other days on request
Friday is our couscous day, the day the kitchen turns around this one dish. It is the most natural day for a large order, and often the day that suits anyway: prayers, family arriving, a meal that stretches comfortably into the afternoon.
Your event falls on another day? Message us on WhatsApp with the date and we will look at it together. And if you would rather go in a different direction, rfissa or seffa, tagines, grills or pastilla, the order can just as easily be built around those.
Delivered hot, ready to serve
This is where a large order is won or lost. Lukewarm couscous is failed couscous. So we deliver with everything needed to hold the heat right through to the last serving:
- dishes cooked in our own kitchen and delivered ready to serve;
- hot-hold chafing equipment set up on site, so the couscous stays hot for the whole meal;
- staff who can stay and serve your guests, if you would rather not run the service yourself;
- disposable plates and cutlery, if you would rather have nothing to wash up;
- the broth carried separately and poured at the moment of serving.
We are not a function hall and we do not do decor. We are a restaurant with a real kitchen and real cooks, preparing your order and bringing it to you. Nothing sits between the stove and your table.
Where we deliver, and how to get a quote
We deliver across Agadir and along the nearby coast: Haut Founty, Founty, Talborjt, Cité Dakhla, Hay Mohammadi and Agadir Bay, as well as Taghazout, Tamraght, Aourir, Inezgane and Dcheira.
The rest is settled in a few messages. Just tell us:
- the date and time of the meal;
- how many guests, you give us the number and we build around it;
- the delivery address;
- whether you want service on site and disposables included.
With that, we put together a clear quote on WhatsApp. No rigid packages: your order is shaped by what you tell us. The same applies to office meals, which we cover in our article on catering for companies in Agadir.
So, how many of you will there be? Send us a message on WhatsApp at +212 5283-81269, or fill in the form on our groups and events page to get your quote. You are welcome to browse our menu first. We will handle the couscous; you look after your guests.
