Group Buffet in Agadir: Moroccan and Italian on One Table

Forty people on Saturday. Half the family will not consider anything but a tajine, one aunt will ask where the salads are, and six teenage cousins will look at nothing except the pizza. You have started ringing caterers, and everywhere the answer is the same: a "prestige buffet", embroidered linen, sculpted centrepieces. But you are not putting on a three-hundred-guest wedding. What you want is a proper group buffet in Agadir: generous, well cooked, no theatre, and no quote that doubles because someone added floating candles.

That is exactly what Madina does, in Haut Founty. Our kitchen runs every day from 8am to midnight, with more than 130 Moroccan and Italian dishes, all of it halal. A buffet here is not a special production wheeled out for the occasion — it is the food we serve every evening, laid out at scale, either in our dining room or delivered to wherever your group is meeting.

What actually goes on the table

A buffet is not judged by the number of lines on the quote. It is judged by what people find in front of them when they walk up to the table. This is the spread groups ask us for most often, and you are free to add to it, cut it back or swap things around.

  • A spread of Moroccan salads to open the meal, the way it is done at home
  • Briouates and pastilla cut into portions to get the table going
  • A slow-cooked tajine, plus couscous when the meal falls on a Friday

Everything is halal and there is no alcohol on the premises, so there is nothing to check and nothing to explain before you invite colleagues, in-laws or business partners. With us the question simply never comes up.

Moroccan and Italian on the same buffet

This is our real difference, and it solves a very practical problem. Every group splits into two camps: the people who came for the tajine, and the people who will politely eat bread and wait for dessert. We put both kitchens on the same table.

On one side, our Moroccan dishes: tajines, couscous, pastilla, rfissa, seffa, grills. On the other, our Italian cooking — wood-fired pizzas, fresh pasta, risotto — made by the same team in the same kitchen. Children and teenagers head straight for the pizzas, grandparents for the tajine, and nobody goes home having eaten bread.

And to finish

A buffet rarely ends quietly. Our desserts work beautifully at scale: Moroccan pastries, sliced fresh fruit, sweet things made to be shared, with mint tea that keeps everyone at the table another half hour. That is usually when the real conversation starts.

Two ways of doing it, depending on how you want the day to run.

At the restaurant. We have a private mezzanine that seats up to 20, and a larger room on the ground floor for bigger groups. A television is available if you have something to present, the Wi-Fi is free, and the terrace stays open for anyone who would rather take their tea outside. You arrive, everything is laid out, and you leave without clearing a single plate.

At your place. We prepare the buffet and deliver it ready to serve, to your home or wherever your group is gathering. We bring the hot-hold equipment, our staff can stay on site to serve, and disposable plates and cutlery can be included if you would rather not deal with washing up or draft anyone into service.

Hot for the last guest, not just the first

The weak point of a delivered buffet is never the cooking — it is the half hour when guests are still talking while the food quietly goes cold. So we set the dishes over chafing equipment, exactly as we would in the restaurant. The first person to serve themselves and the last one through the door eat the same food at the same temperature.
